Ingredients

• 500 g plain white FLour
• 4 heaped tbsp lard (typically used in the “old” recipe) or softened butter
• 2 tbsp sugar
• 2 eggs
• 1 pinch of salt
• 1 orange (only the grated “coloured” part of the peel)
• plenty of extra virgin olive oil and lard for frying (¾ oil and ¼ lard)
• 100 g icing sugar
• 200 g granulated sugar
