• 1 1/2 sticks (12 tablespoons) ice-cold unsalted butter, cubed
• 1/4 - 1/2 cup ice water
• Peach & Blueberry filling:
• 4 peaches, peeled & pitted, cut into ½ inch wedges
• 1/4 - 1/2 cup blueberries
• 1/2 lemon, zest and juice
• 1/4 cup sugar
• 2 tablespoons flour
• 1/8 teaspoon salt
• 1 egg
• 1 tablespoon water
• 1 tablespoon turbinado sugar (optional)
