• 1 9-inch pie crust, rolled flat if needed
• ¼ cup butter
• 1 large sweet onion
• 3-4 large shallots
• 1 very large leek, or 2-4 medium-small leeks
• 1 tbsp. sugar
• 1 tsp. kosher salt

• ½ tsp. ground nutmeg
• ¾ cup swiss cheese, grated
• ¾ cup pepperjack cheese, grated
• 4 ounces cream cheese, cubed
• ⅔ cup heavy whipping cream
• 3 large eggs
