Charred Asparagus, Fennel, Apple and Greens - Inspired Cuisine

Ingredients

• 1/2 bunch green asparagus
• drizzle of olive oil
• kosher salt and black pepper to taste
• 1 small head red leaf lettuce
• 1/2 small head green leaf lettuce
• 1/4 heart of fennel (thinly sliced on a mandolin (optional))
• 1/2 whole Granny Smith apple (halved, cored and thinly sliced)
• kosher alt and black pepper to taste
• 2 large tablespoons of rich (45%) sour cream
• 2 tbsp heavy (whipping) cream
• 1 generous pinch kosher salt
• 1 generous pinch of ground black pepper
• 1/2 lemon juice of 1 lemon
• 1 tbsp olive oil
• Garnish
• 3 whole eggs (medium hard boiled and peeled)
