Chicken & pasta bake - Good Food Middle East

Ingredients

• 2 tbsp olive oil
• 100g smoked streaky bacon, cut into small pieces
• 4 chicken breasts, cut into chunks
• 1 red onion, finely chopped
• 2 garlic cloves, finely chopped
• 1 red pepper, diced
• 1 yellow pepper, diced
• 1 tsp oregano
• ¼ tsp chilli flakes (optional)
• 2 x 400g cans chopped tomatoes
• 1 tsp caster sugar
• small bunch of parsley, roughly chopped
• 3 tbsp mascarpone
• 350g pasta, any shape – if long, snap them in half
• 65g cheddar, grated
• 50g mozzarella, grated
