It sounds pretty weird -- and it's not as pure pomegranate as I was hoping -- but it does happen to be very, very good.

- 1/2 cup 118ml Yellow split peas
- 1 cup 62g / 2.2oz Chopped onion
- 3 Beets with green tops
- 1/2 cup 80g / 2.8oz Rice
- 1 Scallions - sliced well down into the green
- 2 tablespoons 30ml Sugar
- 3 tablespoons 45ml Lime juice
- 1/4 cup 4g / 0.1oz Pomegranate concentrate - (called 'molasses' or 'paste') - see * Note
- 2 cups 292g / 10oz Finely-chopped cilantro
- 2 tablespoons 30ml Finely-chopped spinach
