Ingredients

• 1/2 cup Lima Beans
• 1/4 cup Olive Oil
• 1 1/2 tbsp Sherry Vinegar
• 1/4 tsp Cumin (Ground)
• 1/8 tsp Black Pepper
• Zest of 1/2 Lemon
• 2 cloves Garlic, minced
• 1/4 Medium Green Bell Pepper, diced
• 1/4 Medium Sweet Red Bell Pepper, diced
• 2 tbsp Red Onion, diced
• 1 1/4 cups Vegetable Stock
• 1 cup Golden Couscous
