• One 12-ounce bottle malt vinegar
• 1/2 cup brown sugar
• 1/2 teaspoon salt
• 1 pound cod fillets, cut into finger-size pieces
• 1/2 cup all-purpose flour, plus 1-1/2 cups for the batter
• 1 teaspoon baking powder
• 1-1/2 teaspoons salt
• 1/2 teaspoon freshly ground black pepper
• 1⁄8 teaspoon cayenne pepper
• 1-1/2 cups Guinness beer
• 1 large egg, beaten
• 1/2 to 1 cup canola oil
• Kosher salt, to taste
