This is my vegan version of a classical French tarte au citron and it hits all the marks! 🤤 If you want to impress your friends I highly recommend trying this recipe.

Ingredients
- 160 g all purpose flour
- 3 tbsp (30 g) sugar
- 1/4 tsp salt
- 100 g cold vegan butter
- 2-6 tbsp ice-cold water
- 3/4 cup (150 g) sugar
- zest of 2 lemons
- 3/4 cup (180 g) lemon juice (about 6 lemons)
- 1/2 cup (120 g) plant milk (I used soy)
- 1/3 cup (40 g) cornstarch
- pinch of salt
- tiny pinch of turmeric (optional for color)
- 1 tsp vanilla extract
- 100 g vegan butter
