Ingredients

• 180 g kale, trimmed
• 4 T olive oil
• 1 onion, finely chopped
• 2 cloves garlic, crushed
• 1½ cups risotto rice
• 250 g gypsy ham, chopped
• 1 cup Parmesan, grated
• 3 cups chicken stock
• 4 free-range eggs
• sea salt and freshly ground black pepper, to taste
• For the topping:
• ½ cup panko crumbs
• ½ cup Parmesan, grated
• 1 T butter, for dotting
