  • 5 leaves Collard greens, stems discarded, leaves finely chopped
  • 1 Onions, medium, diced
  • 2 Jalapenos, diced (remove seeds for less heat)
  • 4 cloves Garlic, chopped
  • 5 oz Pancetta, chopped (look for pre-chopped to save time; sub a small ham hock if available)
  • 3/4 cup Black-eyed peas, dried (sub canned black beans, but use double the amount listed )
  • 6 cups Stock, any low-sodium type
  • 2 Bay leaves
  • 1 Tbsp Lemon juice
  • 1/2 cup Buttermilk, low-fat
  • 6 Tbsp Butter, plus more for serving
  • 1 Eggs
  • 1/2 cup Cornmeal
  • 1/2 cup Flour, all-purpose
  • 1/2 tsp Baking soda
  • 1/4 tsp Salt
