• 1 package Cornbread Mix (Bob’s Red Mill is great)
• 1 Egg
• 1 ⁄ 3 cup Whole Milk (estimated)
• 2 bunches Collard Greens
• 1 Red Onion (small red onion, very thinly sliced)
• 2 cloves Garlic (finely minced)
• 1 Tablespoon Extra Virgin Olive Oil
• 2 Tablespoons Cider Vinegar
• 1 teaspoon Kosher Salt
• 4 ears Corn (shucked)
• 4 Tablespoons Unsalted Butter (for serving, divided)
• 1 ⁄ 2 teaspoon Honey (optional for serving)
