Ingredients

• 2 small to medium eggplants
• ¼ cup olive oil
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp dried oregano
• 1.1 pounds cherry tomatoes
• 1 cup parsley leaves
• 1 red onion
• 8 ounces feta
• 1 garlic clove
• 3 tbsp olive oil
• 1 tbsp red wine vinegar
• ⅛ tsp salt
• ½ tsp black pepper (more for serving)
