• 1/4 cup olive oil
• 2 tablespoons white wine
• 2 tablespoons lemon juice
• 2 garlic cloves, finely chopped
• 2 tablespoons chopped fresh chives
• 1 tablespoon fresh thyme, finely chopped
• Salt and pepper from the mill

• 1 dry pint (283g) grape tomatoes, cut into mini dices
• 1/4 cup peeled Cortland apple, cut into mini dices
• 3 tablespoons finely chopped fresh cilantro
• 2 tablespoons finely chopped red onion
• 1 tablespoon lemon juice
• Olive oil
