Ingredients

• Cake-
• 3 cups cake flour (not self-rising)
• 2 teaspoons baking powder
• 1 teaspoon fine table salt
• 1/2 cup full fat coconut milk (canned)
• 3/4 cup of buttermilk
• 2 teaspoons pure coconut extract
• 1 teaspoon pure vanilla extract
• 2 cups of sugar
• 1 1/2 sticks unsalted butter, softened
• 1/4 cup of vegetable oil or canola oil
• 1 cup chopped white chocolate or chips
• 3 eggs
• 2 egg whites
• Frosting-
• 1 stick of unsalted butter, room temperature
• 4 oz cream cheese
• Dash of fine table salt
• 1 teaspoon of lemon juice
• 1/4 cup of coconut milk (canned)
• 2 1/2 cups of confectioner’s sugar (may need a bit more to reach desired consistency)
• 1/2 teaspoon coconut extract
• 1/4 teaspoon pure vanilla extract
• Garnish- about 1.5-2 cups of sweetened shredded coconut for coating
