Individual Beef Wellingtons

Ingredients

• 4 (6 oz) thick filet mignons
• 1 teaspoon salt
• 1/2 teaspoon pepper
• 1 tablespoon EVOO
• 1/2 (17.25 oz) pkg frozen puffed pastry (1 sheet) thawed
• 1 large egg beaten with 2 tsp water
• Mushroom Duxells:
• 1 tablespoon Unsalted butter
• 2 tablespoons minced shallots
• 1/2 teaspoon minced garlic
• 10 ounces button mushrooms finely chopped
• 2 1/2 tablespoons White wine
