Ingredients

  • oil for frying
  • 1 teaspoon ground turmeric
  • salt and pepper
  • 4 medium sea bass, cleaned and filleted
  • 1½ tablespoons flour
  • 2 tablespoons apple (or cider, or red wine) vinegar
  • 2–3 tablespoons cold water
  • extra virgin olive oil to thicken
  • 3–4 cloves garlic, chopped
  • 1 green chilli
  • 100 g fresh white breadcrumbs (from approximately 3 slices of bread)
  • 200 g walnuts
  • 1 bunch fresh tarragon (or 2 of those pathetic supermarket packets)
  • handful fresh parsley
