Ingredients
- oil for frying
- 1 teaspoon ground turmeric
- salt and pepper
- 4 medium sea bass, cleaned and filleted
- 1½ tablespoons flour
- 2 tablespoons apple (or cider, or red wine) vinegar
- 2–3 tablespoons cold water
- extra virgin olive oil to thicken
- 3–4 cloves garlic, chopped
- 1 green chilli
- 100 g fresh white breadcrumbs (from approximately 3 slices of bread)
- 200 g walnuts
- 1 bunch fresh tarragon (or 2 of those pathetic supermarket packets)
- handful fresh parsley
