Ingredients

• 1 medium pie pumpkin, cut in half, seeds removed and inside scraped clean
• 1 tablespoon olive oil
• 2 tablespoons butter
• 1 medium onion, finely diced
• 1 medium carrot, finely diced
• 3 cloves garlic, minced
• 1 1/2 cups vegetable broth
• 1 cup 35% cream
• 1 1/2 cups shredded sharp cheddar cheese
• 1/2 teaspoon pumpkin pie spices
• Pepper to taste
• Salt to taste
