Ingredients

• 24 ounces beer (2 12-ounce bottles), wheat (see note)
• 1 1/2 cups water
• 2 tablespoons dark brown sugar
• 1 teaspoon dried thyme
• 5 pounds beef short ribs (6 to 8 English-style ribs) (see note), trimmed of excess fat
• 3 onions , peeled and cut into 1/2-inch rounds
• 1 tablespoon vegetable oil
