Ingredients

• 2 garlic cloves, peeled and crushed
• 1 sprig of fresh thyme
• 90 g butter
• 1 white onion, peeled and chopped
• 2 small cauliflowers
• 2 shallots, peeled and finely chopped
• salt and pepper
• 1 bunch of fresh dill, fronds and stalks separated
• 1 bay leaf
• milk, to cover
• 200 g black pudding
