Ingredients

  • 6 Chicken Wing
  • 600 ml Water
  • 3 tbsp Sake
  • 1 tsp Chicken Stock Powder (Granulated)
  • 1 Long Green Onion (Naganegi) (green part)
  • 20 g Ginger Root (crushed)
  • Soy Sauce (10% of the broth)
  • Mirin (10% of the broth)
  • 200 g Chicken Thigh (cut into bite-size pieces)
  • 15 cm Burdock Root (Gobo)
  • 50 g Maitake Mushrooms
  • 50 g Shimeji Mushrooms
  • 50 g Enoki Mushrooms
  • 1 Long Green Onion (Naganegi) (white part, sliced diagonally)
  • 1/2 bundle Seri Parsley (substitute: watercress, cut into 5cm/2" pieces)
  • 80 g Shirataki Noodles (parboiled)
  • 2 pieces Kiritanpo (pounded rice formed into cylinders)
  • 3 pieces Damako-mochi (pounded rice shaped into bite-size balls)
  • Shichimi Chili Pepper (optional)
