Ingredients
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1 large red onion , chopped medium
- 1 teaspoon granulated sugar
- 2 large cloves garlic , minced
- 2 anchovy fillets , rinsed
- 1/4 cup finely chopped dried apricots
- 1 tablespoon sherry vinegar
- 3 bags baby spinach (10 ounces each), stemmed, washed thoroughly, and partially dried, with some water left clinging to leaves
- Salt and ground black pepper
- 1/3 cup pine nuts , toasted in small dry skillet over medium heat until golden and fragrant, about 5 minutes
