BIRRIA TACOS - Community Kitchen

Ingredients

• For the marinade:
• 1 lb beef shank or beef chuck roast
• 1 lb beef top sirloin or cab sirloin
• 2 dried ancho chile peppers
• 1 small can chipotle peppers in adobo
• 1/2 C whole peeled tomatoes
• 1/3 C apple cider vinegar
• 8 garlic cloves, crushed
• 1 t dried oregano
• 1 t ground cumin
• 1 t smoked paprika
• salt + cracked pepper
• For the stew:
• 1 yellow onion, chopped
• 1 cinnamon stick
• 2 - 3 bay leaves
• 1 qt chicken stock
• For the tacos:
• 12 (4”) corn or flour tortillas
• 1 bunch cilantro
• sliced avocado
• 3 - 4 C Mexican cheese, grated
