Honey Passionfruit Cupcakes | Capilano Honey

Ingredients

• 250ml (1 cup) light olive oil
• 180g (½ cup) Capilano Yellow Box Honey
• 2 tsp vanilla extract
• Zest of 1 orange
• Juice of ½ orange
• 230g (1 cup) unsweetened Greek yogurt
• 160ml (⅔ cup) passionfruit pulp
• 300g (2 cups) plain flour
• 1 tsp baking powder
• ½ tsp bicarb soda
• 500g mascarpone (or more yoghurt)
• 360g (1 cup) Capilano Yellow Box Honey
• Juice of 1 orange
