Ingredients

• 1/4 c Heavy cream; whipped soft
• 1 oz Semisweet chocolate; shaved
• 1 Nine-inch Chocolate Crumb
• 2 c Milk; scalded
• 4 lg Egg yolks
• 6 tb Sugar
• 3 Egg whites
• 1 ts Vanilla extract
• 4 ts Cornstarch
• 1 1/2 ts Unflavored gelatin
• 1/4 ts Cream of tartar
• 2 tb Water
• 2 tb Dark rum
• 1 1/2 oz Semisweet chocolate; melted
• 1/2 c Heavy cream; well chilled
• 1/2 oz Unsweetened chocolate;
• 1 tb Dark rum
