Ingredients

  • 2 pounds chicken legs and breasts
  • 8 cloves garlic, minced and fried in peanut oil or vegetable oil until golden brown
  • ¼ cup finely chopped shallots
  • About 2 inches ginger, peeled and cut into chunks
  • 3 quarts water
  • Small bowl of chile paste or hot salsa
  • ¼ cup slivered ginger
  • 3 tablespoons Chinese pickled vegetables (optional)
  • ¼ cup packed fresh coriander leaves
  • 3 tablespoons dried shrimp, coarsely chopped (optional)
  • Small bowls of soy sauce
  • Condiment bowl of Fish Sauce with Hot Chiles
  • ½ teaspoon salt
  • 2 cups Thai jasmine or American jasmine rice
  • 1 tablespoon Thai fish sauce
  • ¼ cup raw peanuts, dry-roasted and coarsely chopped
