Ingredients

• 1 tbsp olive oil
• 1 onion
• 2 cloves garlic
• 1 red chilli, deseeded
• 2 tsp ground cumin
• 1 tsp paprika
• 1 tsp ground coriander
• 1 red pepper
• 2 tins black beans, drained
• 1 tin chopped tomatoes
• 1 tbsp tomato puree
• Pinch sugar
• Salt and pepper
• 1 bunch coriander, washed and roughly chopped
• For the salsa
• 1 large ripe avocado
• 150g ripe cherry tomatoes, chopped in quarters
• Juice 1 lime
• 1 red chilli, deseeded and chopped
• 1 clove garlic, crushed
• 1 small bunch coriander, washed and chopped
• To serve
• 8 flour or corn tortillas
• Grated cheese such as mature cheddar or manchego
• Sour cream
