• 1 teaspoon achiote powder
• 1 1/2 cans (20 ounces) coconut milk
• 1 teaspoon cinnamon powder
• 1 teaspoon ginger, finely minced
• 2 1/2 pounds red snapper
• Salt and pepper to taste
• 1 tablespoon dried oregano
