Ingredients
- 3 cups English cucumbers
- 2 cups cherry tomatoes
- 1/4 red onion thinly sliced
- 1/4 cup fresh chopped herbs of your choice
- 3 cups fresh spinach
- 4 tablespoons olive oil
- 1 1/2 tablespoons red vine vinegar
- 1/4 teaspoon dried oregano
- Salt and pepper to taste
