• 6 cups (1 kg) fresh peaches, pitted and diced (5 to 6 peaches)
• 1 tbsp (15 ml) lemon juice
• 1/4 cup (60 ml) 35% heavy cream
• 3/4 cup (105 g) unbleached all-purpose flour
• 2 tbsp sugar
• 1/2 tsp baking powder
• 1/4 tsp baking soda
• 1 pinch salt
• 1/4 cup (60 g) cold unsalted butter, diced
