Ingredients

• 5 pounds sweet potatoes, peeled and cut into 2-inch pieces
• 1 cup water
• 2 eggs
• 1 teaspoon vanilla
• 1/2 cup butter, melted
• 1 cup brown sugar
• 2-3 teaspoons salt (or to taste)
• 1/2 cup milk or heavy cream
• For the topping
• 1/2 cup brown sugar
• 1/3 cup flour
• 1/3 cup melted butter
• 1 cup Diamond of California® chopped pecans
• 3-4 cups mini marshmallows
