Creamy Lemon Chicken Rice Soup

Ingredients

• 3 skinless, boneless chicken thighs (cut into 1/4" strips)
• 1 tbsp vegetable oil
• 1 medium finely diced onion
• 1 parsnip peeled and sliced
• 2 carrots peeled and sliced
• 2 stalks celery cut into 1/4" slices
• kosher salt
• black pepper
• 1 carton (32 oz) chicken stock
• 1/4 cup basmati rice (or 1/2 cup pre-cooked rice)
• 1 whole lemon
• 3 tbsp full fat sour cream or crème fraîche
• 1 tbsp flour
• 2-3 tbsp water (to thin the mixture)
• 2-3 sprigs finely chopped fresh dill (plus extra for garnish)
