- Finely grated zest of 1 lemon
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon salt flakes
- ½ teaspoon Keen’s curry powder
- ¼ teaspoon sweet paprika
- A good grind of white pepper
