Courgette and cornmeal pie

Ingredients

• 10 steps
• 2 lb courgettes
• grate coarsely; press to extract juices
• mix well
• 1 cup onion chopped
• 4 oz feta cheese crumbled
• 1/2 cup cornmeal
• pepper
• 1/4 cup packet mint leaves chopped
• 2 eggs
• 1/3 cup olive oil mix in
• 2 medium tomatoes thinly sliced
• 2-3 tablespoons toasted breadcrumbs
