Ingredients

• 6 ounces fresh raspberries
• 1/2 cup seedless raspberry jam
• 1/2 cup thinly sliced sweet onions
• 1/4 cup dried cherries
• 2 jalapeno peppers, finely diced
• 2 tablespoons Colavita raspberry vinegar
• 1/2 teaspoon mustard seeds
• 1/2 teaspoon salt
• 1/4 teaspoon freshly ground black pepper
• 2 pounds ground chuck
• 2 teaspoons shallot salt, or onion salt
• 1 teaspoon freshly ground black pepper
• 18 slices bacon
• Vegetable oil, for brushing on grill racks
