Ingredients

• 3 sweet potatoes, peeled and cubed
• 3 red bell peppers, seeded and cubed
• 1 large onion, cut into thin wedges
• 4 cloves garlic, peeled and halved
• 3 tbsp (45 ml) olive oil
• 2 cans (19 oz/540 ml each) lima beans, rinsed and drained
• 6 cups (170 g) kale, roughly chopped
• Salt and pepper
• 1/2 cup (125 ml) plain Greek yogurt
• 1/2 tsp (2.5 ml) sweet paprika
• 1/4 tsp (1 ml) cayenne pepper
• 1 cup (175 g) cherry tomatoes, halved
• 2 tbsp (30 ml) olive oil
• 2 tbsp (30 ml) lemon juice
• 2 tsp (10 ml) capers, roughly chopped
