Chile Corn Cakes

Ingredients

• 1/4 c Rich chicken stock
• 1 Egg beaten
• 1 ts Ground cumin
• 1/2 c milk
• 1/2 c Red bell pepper; chopped
• 1/4 c Yellow bell pepper; chopped
• 2 c Fresh corn kernels;
• Vegetable oil for sauteeing
• 2/3 c Yellow onions; chopped
• 2 tb Cilantro; chopped
• 2 tb olive oil
• 1 tb Pure chile powder
• 3/4 c Flour
• 1 tb Unsalted butter; melted
• Salt
• 1/2 c Yellow cornmeal
• 1 ts Baking Powder
