Ingredients

• 1 medium aubergine
• 1 tbsp of sunflower oil
• 1 tbsp of reduced salt soy sauce
• 1 tbsp of Japanese rice vinegar
• 1 tbsp of smooth peanut butter (with no added sugar)
• 1 tsp of honey
• 275g pack of cooked rice noodles
• 1 large carrot, peeled and shredded or coarsely grated
• 100g of sugar snap peas, blanched and sliced on the diagonal
• 2 salad onions, finely sliced
