• 2 cup beef broth
• 1 TBS extra virgin olive oil
• 2 TBS unsalted butter, softened
• 1/2 teaspoon salt
• 2 TBS all purpose flour
• 2 1/2 lb beef chuck roast, cut into 2-inch cubes
• 1 1/2 lb sliced mushrooms
• 1 medium onion, sliced
• 3 garlic cloves, finely chopped
