Honolulu Cookie Company Recipe

Ingredients

• 1 cup (2 sticks) unsalted butter , softened to room temperature
• 1/2 cup granulated sugar
• 1/2 cup brown sugar , packed
• 1 large egg , room temperature
• 1 teaspoon vanilla extract
• 1/4 teaspoon almond extract
• 2 1/2 cups all-purpose flour , sifted
• 1/4 teaspoon salt
• 1/2 cup shredded sweetened coconut
• 1/3 cup finely chopped macadamia nuts
• Optional: 1/4 cup finely diced dried pineapple
• Optional: 8 ounces semi-sweet or white chocolate , melted for dipping
• Pineapple-shaped cookie cutter
