White Chicken Chili - Cat Ebeling

Ingredients

• 2 lbs. organic chicken breasts, or boneless skinless thigh meat
• 1-2 Tbsp extra virgin olive oil
• 2 cloves of garlic, minced
• 2 cans white beans
• 2 medium onions, diced
• 1 small can mild green chili peppers, chopped
• 1 cup chopped fresh cilantro
• 2 cups chicken stock or more or less to taste
• 2-4 tsp cumin powder
• 1 tsp chili powder
• Sea salt and pepper
• Red pepper flakes, if desired
