Bacon & Spinach Crustless Quiche

Ingredients

• 6 strips bacon, cut into 1/2-inch (1 cm) pieces
• 1 tbsp (15 ml) olive oil
• 1/2 red onion, diced
• 2 tbsp (30 ml) Gourmet Garden Garlic Stir-In Paste
• 5 large eggs
• 5 egg whites
• 2 tbsp (30 ml) flour
• 1 tsp (5 ml) finely chopped fresh jalapeno pepper
• 1 cup (250 ml) mozzarella cheese, shredded
• 2 cups (500 ml) baby spinach, cooked and chopped
