Savory Beef Stew Recipe

Ingredients

• 2 tablespoons oil (canola oil)
• 1 1/3 pounds stewing beef
• 1 yellow onion (large onion, roughly diced)
• 3 ounces green bell pepper (1/2 pepper, roughly diced)
• 2 stalks celery (sliced)
• 3 carrots, sliced
• 3 cloves garlic, diced
• zatarain's gumbo base (1/4 cup, optional)
• 32 ounces beef broth (or chicken broth)
• 32 ounces water
• 1 whole tomato (ripe, peeled and chopped)
• 1 1/2 pounds Yukon Gold potatoes (roughly chopped, 4 medium potatoes)
• 1 tablespoon oregano
• 1 tablespoon Italian seasoning
• Salt
• pepper
• 1 1/2 tablespoons corn starch (or enough to thicken)
