• 1/2 c chopped sundried tomatoes, packed in oil and well drained
• 1/4 c mayonnaise
• 1 tsp grated lemon peel or zest
• 1/2 tsp ground cumin
• 1/4 tsp cayenne pepper
• 1-1/2 c sliced red bell pepper, seeds and ribs removed
• 1-1/2 c sliced sweet onion
• 3 tbsp olive oil, DIVIDED
• 1 lb DELI TURKEY BREAST, cut in 1/2-inch slices
• 4 Sandwich English muffins, split and lightly toasted
• 1 c shredded Mozzarella cheese
