• 2 large chicken breasts
• 200g puy lentils
• 200g mixed salad leaves
• 2 avocados, halved and sliced
• 2 pink grapefruits, segmented (reserving the juices)
• 1 red onion, finely sliced
• 1 large handful of coriander, roughly chopped
• 1 large handful of parsley, roughly chopped
• 1 tsp sumac
• 100g greek yoghurt
• 1 tbsp extra virgin olive oil
• 1 tbsp rose water
• 1 tbsp tahini
• 2 tsp white wine vinegar
• 1 tsp honey
• Juice of a lemon
• Reserved pink grapefruit juice
