Recipe: Warm Potato and Salmon Salad with Bacon Vinaigrette

Ingredients

• 1kg gourmet potatoes
• 400g NZ hot smoked salmon
• 24 capers
• 4 spring onions finely sliced
• 1 head frisee lettuce
• Brown Sugar Bacon Vinaigrette
• 4 slices Hellers Danish middle bacon finely diced
• ½ white onion finely diced
• 2 tbsp brown sugar
• 3 tbsp sherry vinegar*
• 1.5 tbsp Dijon whole grain mustard
• Pinch each of ground cinnamon and cloves
• ¼ cup extra virgin olive oil
• Cracked pepper and sea salt
