• 2 tablespoons (30 ml) Szechuan peppercorns, crushed
• 1 tablespoon (15 ml) black peppercorns, crushed
• 3 cup (750 ml) water
• 1/2 cup (125 ml) sugar
• 6 tablespoons (90 ml) coarse salt
• 2 bay leaves
• 2 duck breasts, about 1 lb (454 g) each
