• 1 small onion, diced
• 1 (15 ounce) can Hatch Green Chile Enchilada Sauce
• 2 (4 ounce) cans Hatch Roasted and Diced Green Chiles
• For Tostadas:
• 8 small prepared tostada shells
• 4 ounces Mexican Cotija Cheese
• 1 (15 ounce) can black beans, smashed
• Cilantro leaves for garnish
