• ⅓ cup extra virgin olive oil, divided
• 2 red, yellow, or orange bell peppers, sliced ½ inch thick
• 1 medium yellow onion, sliced ½ inch thick
• 2 garlic cloves, sliced
• ½ cup niçoise olives
• 1 teaspoon smoked sweet paprika
• Salt and pepper, to taste
• ½ lemon, zested
• 1 tablespoon parsley, chopped
