• 18 medium Green tomatoes, cored
• 4 c All-purpose flour
• Kosher salt and ground pepper, to taste
• 8 large Eggs
• 4 c Buttermilk
• 8 c Yellow cornmeal, coarse ground
• Vegetable oil, as needed
• 24 oz Baby arugula, fresh
• 24 each Purple potatoes, roasted, cooled, sliced in thirds
• 24 each Red bliss potatoes, roasted, cooled, sliced into thirds
• 1 1/2 c Tomato relish
